Crab Cakes with Spicy Tartar Sauce



1 lb native crab meat
1 cup unseasoned bread crumbs
5 large Tbsp Cains All Natural Mayonnaise
1 bunch scallions, chopped
5 large basil leaves, chopped
1 Tbsp + 1 tsp Old Bay seasoning
juice from 1 lemon
1 egg, lightly beaten
salt and pepper to taste
8 oz Cains Tartar Sauce
1 tsp cayenne pepper
1 small red pepper, chopped small
2 Tbsp Olive Oil

  Mix together crabmeat, bread crumbs, mayonnaise, 2/3 of scallions, basil, 1 Tbsp Old Bay seasoning, lemon juice and egg. Season with salt & pepper to taste. Form 4 large cakes or 8 small cakes. Mix together tartar sauce with the remaining scallions, cayenne pepper, Old Bay seasoning and chopped red peppers. Heat 2 Tbsp olive oil in a large skillet on medium heat and place each crab cake into skillet. Cook crab cakes for 5 minutes on each side (a little longer if cakes are larger). Serve with spicy tartar sauce and wedges of lemon.
