Cha-Cha Lettuce Wraps 1 lb. ground turkey 1 Tbsp olive oil 4 cloves minced garlic 1/2 tsp grated ginger 1/2 cup thinly sliced red pepper 1/2 cup thinly sliced onions 1 cup drained black beans 1 cup drained corn 1 cup Naturally Delicious® Light Raspberry Vinaigrette Dressing 1 head iceberg lettuce 1 cup Naturally Delicious® Peppercorn Parmesan Dressing 2 Tbsp freshly chopped cilantro
Add the cooked ground turkey, black beans, corn and the raspberry vinaigrette and cook for another 2 minutes. Hold warm for service. To prep the iceberg lettuce cups, remove the core, rinse the head with cold water, and shake off the excess water. Cut in half and separate the leaves. Pat the leaves dry with paper towels. Place a scoop of the turkey mixture in the middle of each lettuce cup. Top with some peppercorn parmesan dressing and garnish with chopped cilantro. Do not over-fill the lettuce cup. Yield 12 wraps
