Vegetable Bowtie Pasta


1 box bowtie pasta

6 Tbsp olive oil

3 cloves garlic, finely chopped

1 small red onion, chopped small

1 head broccoli, cut into small florettes

2 jars roasted peppers, cut into strips

1 cup frozen peas

1 bunch scallions, chopped

4 plum tomatoes, chopped small

1 cup chicken broth or water

Salt & pepper to taste

8 oz Cains Peppercorn Parmesan Dressing

 

Boil bowtie pasta according to the package directions. Heat large skillet with olive oil until hot. Add garlic and onions and saute for 2 minutes or until onion become translucent. Add broccoli, roasted peppers, peas, scallions and tomatoes along with chicken stock or water. Salt and pepper to taste.

Let simmer for 5 minutes. Add peppercorn parmesan dressing and bring to a simmer.  When pasta is cooked, drain and place pasta into mixing bowl. Pour vegetable sauce onto pasta and mix well to combine.


Makes 4 servings
