Grilled Vegetable Sandwich

1 small zucchini, sliced 
1 small yellow squash, sliced 
2 portabella mushrooms 
4 Tbsp Cains® Olive Oil Mayonnaise Dressing
½ bunch parsley, chopped 
¼ bunch scallions, chopped 
salt & pepper to taste 
your choice of bread 
1 tomato, sliced 
Brush zucchini, squash and mushrooms with 2 Tbsp mayonnaise. Sprinkle chopped parsley and chopped scallion onto vegetables, add salt and pepper to taste and mix. Preheat oven to 350 degrees and lay vegetables onto cookie sheet. Bake vegetables for 12-15 minutes. Let cool. Add mayonnaise to your favorite bread. Assemble sandwich with cooked vegetables and sliced tomatoes.
